Cucumber-Mint Guacamole
Ingredients
- Two ripe avocadoes pitted and cubed
- 1/2 cup English cucumber diced
- 1/2 cup fresh squeezed lime juice
- 1/2 cup Roma tomatoes diced
- 1 tablespoon agave nectar or maple syrup
- Several leaves of fresh mint chopped
- Pink Himalayan salt and freshly ground pepper to taste
- Red chili flakes to taste optional
Instructions
- In a small mixing bowl, place avocado, and all other ingredients, and gently blend. Adjust seasonings. Serve up this tasty, refreshing dip with crudites, taco chips, flax crackers, nori sheets, cabbage leaves, etc. Enjoy!
