Cucumber-Mint Guacamole
This fresh and vibrant take on traditional guacamole makes a gorgeous addition to your appetizer spread. It’s also a stunning topper for salads, open-faced sandwiches, wraps, toast, Buddha Bowls, etc. Enjoy this raw, vegan, gluten and soy-free condiment often, especially in the warmer months of the year, as it is a beautiful cooling delicacy. Serves 2-4.
- Two ripe avocadoes pitted and cubed
- 1/2 cup English cucumber diced
- 1/2 cup fresh squeezed lime juice
- 1/2 cup Roma tomatoes diced
- 1 tablespoon agave nectar or maple syrup
- Several leaves of fresh mint chopped
- Pink Himalayan salt and freshly ground pepper to taste
- Red chili flakes to taste optional
In a small mixing bowl, place avocado, and all other ingredients, and gently blend. Adjust seasonings. Serve up this tasty, refreshing dip with crudites, taco chips, flax crackers, nori sheets, cabbage leaves, etc. Enjoy!
