Four cups mixed leafy greens, such as organic Romaine lettuce, spinach, butter lettuce, baby kale, red leaf lettuce, etc. Combining light and heavy greens creates a substantive and appealing base

Two or more cups of colorful raw veggies, cut in bite-size pieces, such as carrots, zucchini, red bell pepper, cucumber, jicama, alfalfa sprouts, cherry tomatoes, grated beets (add before serving to avoid a purple salad), sugar snap peas, sunflower sprouts, etc.

Flavor-packed extras such as fresh orange chunks, dried cranberries, raisins or currants, diced apple, sliced Kalamata olives, sun-dried tomatoes, capers, fresh herbs like basil, cilantro or mint

Heathy fats like fresh avocado, a scoop of hummus or tapenade, sunflower, hemp or pumpkin seeds, chopped almonds, pistachios, or walnuts.

Directions:
