This sublime dressing, made from Cashew Sour Crème, is not only scrumptious, it is also healthier for you than any commercial dressing, with no saturated fat, cholesterol, or dubious/inflammatory ingredients. Makes about 1.5 cups.
- 1/2 cup Vegan Sour Crème
- 1/2 cup freshly squeezed lemon juice
- 1/2 cup hempseed oil, raw sesame oil, or high-quality olive oil
- 1 tablespoon finely minced lemon zest, or to taste
- 2 teaspoons Dijon mustard
- 1 teaspoon minced fresh garlic, or to taste
- 1 teaspoon maple syrup or agave nectar (or more, to balance acidity)
- 1/2 teaspoon turmeric
- Pink Himalayan salt and freshly ground pepper to taste
Place all ingredients in a high-speed blender and process until creamy. Enjoy with salads, steamed broccoli, roasted veggies, quinoa/rice dishes, over entrées, as a dip for crudités, to dress pasta salad, over baked spuds, and more.
