"Magic" Brownies (Vegan, Gluten-Free)
Ingredients
- 1 cup gluten-free or standard baking flour
- 1 cup organic white raw, or coconut sugar
- 1/2 cup unsweetened cocoa or cacao powder
- 1 teaspoon baking soda
- 1/2 teaspoon Pink Himalayan Celtic salt
- 1/4 cup vegan chocolate chips
- 1/4 cup coconut oil or melted vegan butter
- 3/4 cup almond or other plant-based milk
- 2 teaspoons raw apple cider vinegar
- 1/4 cup ripe banana mashed
Instructions
- Preheat oven to 350 degrees.
- In a small bowl, place vinegar and plant-based milk, allow to rest for 5 minutes.
- Then, add milk mixture, banana, sugar, oil, and THC drops, if using, to blender and mix (or whip together by hand).
- In a larger bowl, stir together flour, baking soda, pink salt, cacao powder, and chocolate chips.
- Gently combine wet and dry mixtures.
- Place batter in a well-oiled 8” square baking pan and bake approximately 30 minutes, until cake pulls away from edges of pan slightly.
- Makes 18 small brownies.
