This healthy plant-based/vegan sour crème—a tangy sister to French crème fraîche—is a deliciously versatile condiment for baked potatoes, Mexican entrées, chili variations, desserts, and more. It also factors into other great recipes, like our Lemon Dreams Salad Dressing. Makes about two cups.

Ingredients

  • 1 1/2 cups raw cashews, soaked 30 minutes and drained
  • 3/4 cup pure/distilled water
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons raw apple cider vinegar
  • 1/2 teaspoon Pink Himalayan salt, or to taste

Directions

Place the drained cashews in a high-speed blender with the water, lemon, vinegar, and salt. Blend on high until silky smooth, adding a touch more water if needed. This sour crème will also thicken as it chills.
