When it comes to salsa, we typically think of the Mexican version as the very definition of the term. Happily, we can expand our culinary horizons to explore versions from other cultures. The more delicious variations on this piquant fresh sauce the better, no? This Italian rendition is amazing with ripe Heirloom tomatoes. Mix red and yellow options for beautiful visual effect.
Ingredients
- 3 cups ripe, organic tomatoes, chopped. Heirlooms are fabulous, or use organic Roma, or sliced grape or cherry tomatoes.
- 1 cup fresh basil, thinly cut
- 1/2 cup Kalamata olives, thinly sliced
- 1/2 cup sweet red onion, finely chopped
- 1 tablespoon of capers
- 1 tablespoon high-quality olive oil
- 1 teaspoon Balsamic vinegar, or more to taste
- 1 teaspoon fresh garlic, minced, or more to taste
- Pink Himalayan salt and freshly ground pepper, to taste
Directions
Combine all ingredients in a glass mixing bowl and chill so flavors can mingle. Serve with fresh veggies, plant-based cheese & crackers, on a tapas platter with Tapenade Provençale and Mediterranean Artichoke Dip for a stunning spread, in sandwiches or wraps, over salads, soups, and entrées.
