If you’re ready to find more ways to love zucchini, bravo, as this versatile veggie is a fabulous “blank slate” to showcase a wide array of flavors.
These thin, delicate slices of zucchini are ideal to encapsulate other delicious ingredients, making these flavorful roll up’s a superb appetizer or light entrée with a side of soup, such as this Creamy Asparagus Bisque.
Ingredients:
- 2-3 medium sized organic zucchini
- One recipe “Living” Pesto
- 1/2 to 1 cup thinly sliced Heirloom tomatoes, or other ripe, gorgeous options.
- Violife “Just Like Feta” cheese crumbles (optional)
- 1/2 cup pitted Kalamata olives, sliced
- Pink Himalayan salt and fresh ground pepper to taste
- Unbleached toothpicks
Directions:
Chop the ends off each zucchini. Then, using a mandolin or vegetable peeler, start peeling long, wide strips from the zucchini. You can also cut very thin, lengthwise slices with a sharp knife. Continue until you have enough strips for the number of rolls you want to make.
To assemble, spread each slice evenly with “Living” Pesto, leaving a margin around the perimeter for a tidy roll up, then top with several olives, tomato slices, vegan feta, and seasonings. Roll it up and secure it with a toothpick. Continue making rolls with your remaining supplies. These are wonderful, prepared ahead, as part of a tapas array or mezze spread.
By the way, it’s worth seeking out Violife “Just Like Feta” Cheese at Whole Foods markets nationwide. It tastes delicious, is moderately priced, lasts well, and crumbles like feta, with a mild, creamy flavor/texture.
