Ingredients:

  • 4 cups frozen banana chunks
  • 1/4 cup cashews, soaked
  • 1/4 to 1/2 cup organic dried apricots, chopped, soaked 30-60 minutes
  • 1/4-1/2 cup organic raw pecans, chopped
  • 2-4 tablespoons of vanilla almond or coconut milk creamer
  • Pinch of Pink Himalayan salt

Directions:

Place slightly thawed frozen banana slices, soaked apricots, cashews, and salt into a high-speed food processor or blender. Add the creamer gradually, using just enough to create a thick “soft serve” consistency. Blend on high until smooth, stopping to scrape the sides as needed. Place in a glass bowl, stir in the chopped pecans, and freeze your mixture for 1-2 hours to attain an ice crème consistency. Top with additional chopped nuts and enjoy!
