By now you may now that frozen bananas make a healthy, delicious ice crème base when blended to a creamy “soft serve” consistency. The result is not unlike vanilla soft serve you had as a kid, only without the saturated fat, cholesterol, sugar, and chemical additives. This is one of the many stunning flavor variations you can create. Enjoy!
Ingredients:
- 4 cups frozen banana chunks
- 1/2 cup cashews, soaked
- 1/4 cup dark rum
- 1/4-1/2 cup organic raisins
- Chopped raw pecans for topping
- Pinch of Pink Himalayan salt
Directions:
Place slightly thawed frozen banana slices, salt, cashews, and half the rum into a high-speed food processor or blender. Add the remaining rum slowly, using just enough to create a thick ice crème. Blend on high until smooth, stopping to scrape the sides as needed. Place in a glass bowl, stir in raisins, then freeze your mixture for 1-2 hours to attain an ice crème consistency. To serve, top with chopped pecans and savor!
