This deliciously fresh dressing, rich with no added fat, is easy to make and superbly healthy for you too. It adds the perfect creamy, flavorful touch to Mexican-style salads and sides. You can also use it as a dipping sauce for raw veggies, or to complement any Mexican-inspired entrée.

Ingredients:

  • 1 cup raw cashews, soaked 20-30 minutes in purified and drained. See Why Soak Nuts & Seeds.
  • 1/2-1 canned, seeded chipotle pepper in adobe sauce
  • 1/2 cup distilled water
  • 1/2 cup organic red bell pepper, diced
  • 1 tablespoon fresh-squeezed lime juice
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon Pink Himalayan salt
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder

Directions:

Place all ingredients in a high-speed blender and process until smooth and creamy. Thin slightly with more water if desired. You can store any remaining dressing in a glass container in the fridge for several days, noting that it thickens as it chills. For a mild version, use less Chipotle pepper. Muy delicioso!
