Lemon-Caper-Dill Mayo
This scrumptious, healthy mayo is a luxurious condiment with many uses. The capers lend fabulous flavor to this delicious condiment, and they're surprising good for you too. These little flower buds are high in rutin and quercetin, flavonoid compounds with powerful antioxidant activity and impressive liver-protective benefits. If you prefer to omit them, however, the mayo will still be lovely.
Ingredients
- 2 cups raw cashews
- 1/4 cup freshly squeezed lemon juice
- 2-4 tablespoons cold-pressed extra virgin olive oil
- 2 tablespoon capers
- 2 tablespoon raw apple cider vinegar
- 1-2 dates or 1-2 teaspoon raw agave nectar or maple syrup
- 1 teaspoon Dijon mustard
- 1 teaspoon organic dill weed
- 1/2 teaspoon turmeric
- 1/2 teaspoon Pink Himalayan salt
- 3-5 tablespoons of distilled water to thin as needed
Instructions
- Place all ingredients except capers and dill in a high-speed blender and process until smooth and creamy, scraping down the sides as necessary. Add water as needed to achieve a mayonnaise-like consistency. Place in a glass bowl, and stir in capers and dill.
Notes
This lovely mayo will thicken as it chills. Serve with artichokes, asparagus or broccoli, sandwiches, wraps, and anywhere else you would enjoy a rich, piquant, flavor-packed spread.
