New Age Caesar Salad

The iconic Caesar is arguably one of the most popular and beloved salads of all time, despite being traditionally loaded with saturated fat in the form of cheese, egg yolks and heavy oils. So, how about a colorful “New Age” version that's equally delicious but vastly better for you? The colorful additions make for a super elegant presentation, suitable for special of occasions, including holiday feasts!

Course Salad

Ingredients
  

  • 3-6 organic Romaine hearts cleaned and dried, leaves torn into bite size pieces
  • 1 handful thinly sliced red cabbage or radicchio
  • 1 firm but ripe avocado cut into chunks
  • 1 cup sliced grape tomatoes
  • ½ cup thinly sliced carrots
  • 1/2 cup organic frozen corn thawed (optional)
  • ¼ to ½ cup raw hemp hearts
  • 1/2 cup canned chickpeas, drained

Instructions
 

  • Combine all ingredients in a large salad bowl and toss with Enlighted Caesar Dressing.
