Orange-Kale-Avocado Salad with Sesame-Citrus Bliss Dressing
This deliciously nourishing and satisfying salad makes a perfect entrée, rich in vitamins, minerals, antioxidants, protein. fiber and healthy raw fat. The combination of hearty kale, creamy avocado and crunchy seeds married with the piquancy of the citrus dressing is extraordinary tasty, making this a fabulous anchor meal.
- For the Salad
- 4-6 cups fresh organic kale, large stems removed, chopped
- 1 perfectly ripe avocado diced
- 1 cup organic carrot grated
- 1/2 cup raw pumpkin seeds
- 1-2 oranges orange thinly sliced, peel removed
- 1/2 cup diced jicama or organic cucumber peeled and sliced
- 1/4 cup raw hemp seeds
- For the Sesame-Citrus Bliss Dressing
- Ingredients:
- 1/2 cup raw tahini or raw sesame seeds, soaked 30 minutes and drained
- 1/3 cup fresh lemon juice
- 1/3 cup fresh orange juice
- 1 clove garlic
- 1-3 tablespoons water to thin if desired
- 1/2 teaspoon Pink Himalayan crystal salt
- Freshly ground pepper to taste or a dash of cayenne!
Prepare all salad ingredients and place in a large glass or wooden salad bowl.
Combine all of the dressing ingredients in a blender, processing until smooth and creamy.
Add water to thin, if desired, knowing that this dressing thickens as it chills.
Toss salad lightly with dressing, adding more on the side when serving.
Garnish with raw hemp seeds and enjoy!
