New Age Caesar Salad Dressing
Caesar salad is beloved by people all over the world. The secret, of course, is the rich, delicious dressing. This tasty plant-based version is a fresh, healthy upgrade on the traditional recipe. Such exquisite home-made dressings are inexpensive to make, save on packaging, and also allow you to control the ingredients for a healthier, happier outcome.
- 1 cup raw cashews soaked in water for 30 minutes
- 1 cup distilled water
- 4 tablespoons cold-pressed extra virgin olive oil
- 2 tablespoon freshly squeezed lemon juice
- 1 tablespoon Dijon mustard
- 1 tablespoon vegan Worcestershire sauce such as Annie’s brand
- 4 teaspoons capers
- 1 small garlic clove
- 3/4 teaspoon Pink Himalayan crystal salt
- Freshly ground pepper to taste
Place all items in a blender and process until smooth. For a lovely Caesar salad, simply toss this dressing with fresh, organic Romaine lettuce, and top with slivered raw almonds, nutty hemp seeds, or chopped walnuts. Enjoy!
