Arugula-Spinach Salad with Lemon-Caper-Dill Dressing
You will love this piquant, delicious, filling salad for spring, rich in protein and healthy fat to keep you going long and strong! Makes one good-sized portion.
- Several cups of mixed organic greens like spinach, arugula and butter lettuce
- 1/2 cup cherry or grape tomatoes
- 1/2 cup sliced Persian cucumber
- 1/2 cup sprouted lentils mung beans or chick peas
- 1/2 avocado diced
- Raw hemp seeds to garnish optional
- Dressing:
- 1 raw organic zucchini sliced
- 1/2 cup fresh dill chopped, stems removed (or 2-3 tablespoons dried)
- 1/4 cup raw tahini
- 1/4 cup filtered water more or less
- 2 tablespoons lemon juice about 1/2 lemon, juiced
