Arugula-Spinach Salad

You will love this piquant, delicious, filling salad for spring, rich in protein and healthy fat to keep you going long and strong! Toss with Lemon-Caper-Dill Dressing. Makes one good-sized portion.

Ingredients
  

  • Several cups of mixed spinach and arugula l
  • 1/2 cup cherry or grape tomatoes
  • 1/2 cup sliced Persian cucumber
  • 1/2 cup chickpeas
  • 1/2 cup avocado diced
  • 1/4 cup filtered water more or less
  • 2 tablespoons lemon juice about 1/2 lemon, juiced
  • 1 teaspoon maple syrup or agave nectar
  • Sliced raw almonds or hemp seeds

Instructions
 

  • Assemble salad, amounts are approximate, use more or less as you like. Place all dressing ingredients in a high-speed blender and process until creamy. Start with less water if you like a richer dressing. It will also thicken a bit as it chills. Toss salad with dressing, serve and enjoy!
